Ingredients
Grapeseed oil (½ cup)
Canola oil (2 tbsp)
Olive oil (2 tbsp)
Salt (1 tsp)
Salt (¼ tsp)
Honey (4 tsp)
Vegan cheese (1 cup, softened and crumbled)
Lemon juice (¼ cup)
Orange juice (¼ cup)
Fresh lime juice (2 tbsp)
Arugula (2 cups)
Oranges (2 peeled and medium-sized)
Golden beets (6 – unpeeled and trimmed)
Fennels (3 large-sized, without stems)

Steps needed to make golden beet and fennel salad
Golden Beets
Step 1: Take the beets and put them on top of the foil. Top it with some grapeseed oil, be careful not to overdo it. Wrap the foil, making sure it’s tightly packed and the edges are sealed.
Step 2: For 1 to 1.5 hours, place the packet directly on the bbq grid. Use medium-intensity heat to cook until the beets are soft.
Step 3: After removing the package from the grid, open it immediately and allow the beets to cool down.
Step 4: Peel the beets and cut them into wedge-shaped pieces. Once you’re done, put them in the fridge to cool.
Fennels
Step 5: Take the fennels and cut down the length of each in half. To make obtain slices, make every piece shorter by cutting it down ¼ further.
Step 6: Take a bowl and put in the fennels, along with 2 tbsp olive oil and 1 tsp salt.
Step 7: Again, prepare a grill topper with medium heat. Put the bowl on top of it and keep stirring until the fennels become browner and softer. It would take approximately half an hour.
Step 8: After you remove the bowl from the grill, allow the components to cool down naturally. Don’t put them in the fridge!
Prepare the dressing
Step 9: Gather all the juices in their respective quantities. Put them in the blender along with ¼ salt and honey.
Step 10: Pour ½ cup grapeseed oil into the blender during the mixing process.
Final salad preparation
Step 11: Bring both the beets and the fennel mixture together in a bowl. Also add oranges, arugula, and vegan cheese.
